Les <strong>fermentation ana\u00e9robie<\/strong> est un type de fermentation en l'absence d'oxyg\u00e8ne qui est utilis\u00e9 pour la production de nombreux vins. La fermentation a\u00e9robie avec oxyg\u00e8ne est g\u00e9n\u00e9ralement utilis\u00e9e pour fabriquer du pain \u00e0 p\u00e2te aigre. Pour une fermentation sauvage, vous n'avez pas besoin de cultures sp\u00e9cifiques. Ce que vous utilisez, ce sont les organismes d\u00e9j\u00e0 pr\u00e9sents dans l'air ou sur la mati\u00e8re organique elle-m\u00eame, comme lorsque vous travaillez avec des levures naturelles ou que vous faites de la choucroute. <strong>Fermentation cultiv\u00e9e<\/strong> fonctionne avec des cultures tr\u00e8s sp\u00e9cifiques - c'est-\u00e0-dire des compositions bact\u00e9riennes pr\u00e9cultiv\u00e9es - que vous ne pouvez utiliser que pour produire un ferment sp\u00e9cifique, comme le kombucha ou le k\u00e9fir (vous en apprendrez plus sur ces deux boissons ci-dessous !).<br\/>\n<br\/><strong>Avantages de la fermentation<\/strong><br\/>\n<br\/>La fermentation a commenc\u00e9 \u00e0 \u00eatre utilis\u00e9e comme moyen de conservation \u00e0 la pr\u00e9histoire, mais ce type de pr\u00e9paration des aliments pr\u00e9sente d'autres avantages. Les aliments ferment\u00e9s sont <strong>riche en antioxydants<\/strong>, La peau est un excellent moyen de d\u00e9sintoxiquer l'organisme. Ainsi, en les consommant, toutes les toxines sont expuls\u00e9es de votre corps par la peau. Les produits ferment\u00e9s sont \u00e9galement riches en vitamines et min\u00e9raux, tels que les vitamines B1, B2, B3, C et K, la biotine et le phosphore. Vous pouvez acheter <strong>la limonade gazeuse \u00e0 base de th\u00e9 ferment\u00e9<\/strong> Le kombucha est disponible sous diff\u00e9rentes marques dans les magasins d'alimentation biologique, les supermarch\u00e9s et les caf\u00e9s ou, mieux encore, il est possible de le pr\u00e9parer soi-m\u00eame ! Pour ceux qui ne connaissent pas encore cette boisson : le kombucha est fabriqu\u00e9 \u00e0 partir de th\u00e9 sucr\u00e9 (g\u00e9n\u00e9ralement noir) qui est ferment\u00e9 par une culture sp\u00e9cifique appel\u00e9e SCOBY de kombucha pendant 7 \u00e0 14 jours. Le k\u00e9fir dont vous avez peut-\u00eatre entendu parler est le k\u00e9fir de lait, un produit laitier de culture originaire du Caucase. Dans cette r\u00e9gion, il est consid\u00e9r\u00e9 comme une boisson qui prolonge la vie. Le k\u00e9fir de lait est un produit laitier de culture originaire du Caucase. <strong>acide folique, biotine, phosphore et vitamine K<\/strong> \u00e0 l'int\u00e9rieur du k\u00e9fir de lait sont tr\u00e8s b\u00e9n\u00e9fiques pour la sant\u00e9 et la boisson est \u00e9galement anti-inflammatoire. Les grains de k\u00e9fir de lait poussent en petites formes qui ressemblent \u00e0 un chou-fleur et sont grumeleux et blancs. Tout ce dont vous avez besoin, c'est d'un bocal de conservation, du l\u00e9gume de votre choix, du sel et de vos mains. Commencez par nettoyer votre bocal avec de l'eau bouillante pour \u00e9liminer les bact\u00e9ries ind\u00e9sirables \u00e0 l'int\u00e9rieur. Coupez ensuite vos l\u00e9gumes - asperges, kraut ou concombres - et mettez-les dans votre bocal. M\u00e9langez vos l\u00e9gumes avec du sel et laissez-les reposer pendant environ une heure. Enfin, remplissez le bocal d'eau et assurez-vous que tous les l\u00e9gumes sont immerg\u00e9s. Si n\u00e9cessaire, placez un poids - comme un verre plus petit ou une pierre propre - sur vos l\u00e9gumes, afin qu'ils restent immerg\u00e9s.
