Ein k\u00fcrzlich wieder aufgetauchter Lebensmitteltrend, der auf einer jahrtausendealten Tradition der Menschheit beruht, zielt genau auf das Gegenteil ab - Bakterien in unsere Lebensmittel zu bekommen!<\/span>\n<\/div>\n   <\/div>\n<\/div>\n<\/div>\n<!-- row text single -->\n<div class=\"gradientnone\">\n<div class=\"row rowSingleColumnWide spacing\">\n    <div class=\"col articleText\">\n        <div class=\"textStyle_2b\" ><br\/><strong>Fermentationsverfahren<\/strong><br\/>\n<br\/>Es gibt verschiedene Arten von Fermentationsprozessen, die unterschiedliche Lebensmittel mit individuellen Vorteilen hervorbringen. Die <strong>anaerobe G\u00e4rung<\/strong> ist eine Art der G\u00e4rung unter Ausschluss von Sauerstoff, die f\u00fcr die Herstellung vieler Weine verwendet wird. Die aerobe G\u00e4rung mit Sauerstoff wird normalerweise zur Herstellung von Sauerteigbrot verwendet. F\u00fcr eine wilde G\u00e4rung braucht man keine speziellen Kulturen. Man verwendet die Organismen, die bereits in der Luft oder auf dem organischen Material selbst vorhanden sind, wie bei der Arbeit mit nat\u00fcrlichen Hefen oder der Herstellung von Sauerkraut. <strong>Kultivierte G\u00e4rung<\/strong> arbeitet mit sehr spezifischen Kulturen - d. h. vorkultivierten Bakterienzusammensetzungen -, die Sie nur zur Herstellung eines bestimmten Ferments verwenden k\u00f6nnen, wie Kombucha oder Kefir (\u00fcber diese beiden Getr\u00e4nke erfahren Sie weiter unten!).<br\/>\n<br\/><strong>Vorteile der Fermentation<\/strong><br\/>\n<br\/>Die Fermentierung wurde bereits in pr\u00e4historischen Zeiten als Konservierungsmittel eingesetzt, doch diese Art der Lebensmittelzubereitung hat noch weitere Vorteile. Fermentierte Lebensmittel sind <strong>reich an Antioxidantien<\/strong>, Dadurch entgiftet Ihr K\u00f6rper. Durch ihren Verzehr werden also alle Giftstoffe \u00fcber die Haut aus dem K\u00f6rper geschleust. Au\u00dferdem sind fermentierte Produkte reich an verschiedenen Vitaminen und Mineralien, wie z. B. Vitamin B1, B2, B3, C und K, Biotin und Phosphor. Au\u00dferdem wird Ihre Verdauung verbessert und Sie erhalten einen klareren Kopf und mehr Energie!<br\/>\n<br\/><strong>Probiotika<\/strong><br\/>\n<br\/>Probiotika sind die Superhelden unter den Bakterien. Im Gegensatz zu den \u201cschlechten\u201d Bakterien, die wir sofort als Verursacher von Krankheit, M\u00fcdigkeit und Allergien sehen, sind Probiotika die guten. Diese n\u00fctzlichen Bakterien leben in unserem Darm, st\u00e4rken unser Immunsystem und helfen uns schlie\u00dflich, die schlechten Bakterien zu bek\u00e4mpfen, die versuchen, in unser Immunsystem einzudringen. Wissenswertes: Der menschliche K\u00f6rper besteht eigentlich nur aus 10% menschlichen Zellen, und 90% der Zellen bestehen aus verschiedenen Bakterien, die mit uns leben und f\u00fcr uns arbeiten. Sie k\u00f6nnen ihn kaufen <strong>die kohlens\u00e4urehaltige Limonade aus fermentiertem Tee<\/strong> von verschiedenen Marken in Biol\u00e4den, Superm\u00e4rkten und Caf\u00e9s oder - noch besser - machen Sie ihn selbst! F\u00fcr alle, die noch nichts von dem Getr\u00e4nk geh\u00f6rt haben: Kombucha wird aus ges\u00fc\u00dftem (meist schwarzem) Tee hergestellt, der 7 bis 14 Tage lang von einer speziellen Kultur namens Kombucha-SCOBY fermentiert wird. Der Kefir, von dem Sie vielleicht schon geh\u00f6rt haben, ist Milchkefir, eine kultivierte Molkerei, die aus dem Kaukasus stammt. In dieser Region wird er als lebensverl\u00e4ngerndes Getr\u00e4nk gepriesen. Die <strong>Fols\u00e4ure, Biotin, Phosphor und Vitamin K<\/strong> im Inneren des Milchkefirs sind sehr vorteilhaft f\u00fcr Ihre Gesundheit und auch das Getr\u00e4nk ist entz\u00fcndungshemmend. Milchkefirk\u00f6rner wachsen in kleinen Formen, die einem Blumenkohl \u00e4hneln und klumpig und wei\u00df sind. Milchkefir wird hergestellt, indem man diese K\u00f6rner mit Milch vermischt und die Mischung 1-2 Tage lang bei Raumtemperatur ruhen l\u00e4sst.<br\/>\n<br\/>Wasserkefir kann leicht und sprudelnd oder tiefgr\u00fcndig und hefig sein und manchmal sogar eine sehr geringe Menge Alkohol enthalten. Sein Geschmack reicht von s\u00fc\u00df bis sauer, je nach Zubereitung. Wasserkefir-SCOBYs sehen aus wie kleine Kristalle und k\u00f6nnen in Fruchts\u00e4ften, Zuckerwasser, Pflanzenmilch oder Kokosnusswasser leben, was sie perfekt f\u00fcr Ihre Kefir-Experimente macht.<br\/>\n<\/div>\n   <\/div>\n<\/div>\n<\/div>\n<!-- row text single -->\n<div class=\"gradientnone\">\n<div class=\"row rowSingleColumnWide spacing\">\n    <div class=\"col articleText\">\n        <div class=\"textStyle_2b\" ><br\/><strong>Do It Yourself<\/strong><br\/>\n<br\/>Sie brauchen keine Ger\u00e4te zu kaufen und k\u00f6nnen noch heute eine einfache nat\u00fcrliche Fermentierung zu Hause durchf\u00fchren! Alles, was Sie brauchen, ist ein Einmachglas, das Gem\u00fcse Ihrer Wahl, Salz und Ihre H\u00e4nde. Reinigen Sie zun\u00e4chst Ihr Glas mit kochendem Wasser, um unerw\u00fcnschte Bakterien im Inneren abzut\u00f6ten. Schneiden Sie dann Ihr Gem\u00fcse - z. B. Spargel, Kraut oder Gurken - und geben Sie es in Ihr Glas. Mischen Sie das Gem\u00fcse mit Salz und lassen Sie es etwa eine Stunde lang stehen. F\u00fcllen Sie schlie\u00dflich das Glas mit Wasser und achten Sie darauf, dass das Gem\u00fcse unter Wasser ist. Legen Sie ggf. ein Gewicht - z. B. ein kleineres Glas oder einen sauberen Stein - auf das Gem\u00fcse, damit es unter Wasser bleibt.
